Pizza Soup

We are always looking for tasty recipes that don’t require hours in the kitchen to get ready.  This recipe for Pizza Soup is a perfect way to wow your friends or family without having to spend all day tied to the stove.  This delicious recipe tastes like something your grandmother would make from scratch for a big Sunday family feast, assuming your grandmother is an accomplished chef.  The secret is that you only have to spend about 10-15 minutes in the kitchen yourself to get the same results.  This makes Pizza Soup a great option for weekday meals.

Ingredients:

1 can chicken broth

2 cans (19 oz each) Progresso Minestrone Soup

2 cans crushed stewed tomatoes

1 lb. Italian Sausage

1 medium yellow onion, diced

1 clove garlic, minced

1 package frozen chopped spinach

1 package fresh tortellini pasta

Shredded Mozzarella or Parmesan Cheese

Salt & Pepper

Preparation:

- Brown Italian Sausage, stirring in diced onion and garlic half way through.

- While sausage is cooking, put chopped spinach and cans of tomatoes, Minestrone Soup, and chicken broth into at least 4 quart stock pot over medium heat.

- Add browned sausage / onion mixture to soup and simmer for 1 hour.  Add tortellini and cook final 5-7 minutes.

- Ladle into bowls and serve with Mozzarella or Parmesan cheese.

Editors Note:  Admittedly, this recipe does not taste exactly like Pizza.  It does however deserve more than your typical and fairly bland  “Italian Soup” label.  For that reason we are spicing things up a bit and calling this Pizza Soup.  We would however love to hear suggestions from our readers on an updated name.
