Attempting not to sound like a total hypocrite when talking about making salad dressings at home is very hard for me to do.  It’s just so easy to swing through the dressing aisle at the store and pickup whatever you want.  I will absolutely admit there are some good dressings out there and I tend to do this myself way more often than I should.

Making your own salad dressing at home is usually very simple and when you have access to fresh ingredients, it’s almost always better than anything store bought.  So with that in mind I am re-posting the Homemade Raspberry Vinaigrette that I included with the Blueberry Summer Salad recipe last month.  Try out, it’s hands down better than a big name bottle you’ll find sitting on the shelf at the store.  It’s also fun and cool to make your own, so there is that double bonus too.

Homemade Raspberry Vinaigrette

Ingredients:

  • 4 cups fresh raspberries or thawed frozen unsweetened raspberries
  • 1 cup reduced sodium chicken broth
  • 6 tablespoons sugar
  • 3 tablespoons cider vinegar
  • 2 tablespoons and 1 1/2 teaspoons extra virgin olive
  • 1 1/2 tablespoon Dijon mustard

To Make:

Press raspberries through a sieve, reserving juice; discard seeds. In a jar with a tight-fitting lid, combine the broth, sugar, vinegar, oil, mustard and reserved juice. Refrigerate.  Shake well before serving.
