Summertime is Salad Time

Zucchini and Green Bean Salad

It is summer, thus we barbeque with friends. As per request, bringing a side can range from opening a bag of chips, to heating your kitchen to temps that rival outside. Here is an easy salad that tastes great, is healthy, and always generates requests for the recipe. Check out Martha Stewart’s website for other variations.


  • 2 cans (15 1/2 ounces each) cannellini beans, drained and rinsed
  • 3/4 pound zucchini (about 2 small), trimmed, quartered lengthwise, and thinly sliced on the diagonal
  • 4 ounces green beans, trimmed and thinly sliced on the diagonal (3/4 cup)
  • 2 ounces fresh Parmesan cheese, crumbled (1/2 cup)
  • 1/2 cup fresh basil leaves, torn (wait till serving….please)
  • Grated zest and juice of 2 lemons
  • 1 tablespoon olive oil or more if needed
  • Coarse salt and ground pepper



I generally double this to feed a crowd. Letting this marinate for a day really blends the flavors. If you’re too busy, a couple hours should do. Cut everything up. Be generous with the salt and pepper. If it’s too salty add more oil, which will diffuse the “saltiness”.  Except for the basil…WAIT FOR THE BASIL. It will get battered and bruised. Let the salad come to room temp and serve.
