Venison Leads Hearty Winter Menu at Seasons 52

ORLANDO, FLA. (December 2014) – Venison is winning new fans and gaining a place on the American table. With rich flavor and fine texture, venison lends itself to a range of hearty winter preparations, such as braising, stewing and grilling.

Seeking a depth of flavor to rival the finest quality beef, Seasons 52’s search for venison led to Durham Ranch in New Zealand. Raised on picturesque family farms throughout New Zealand, Durham Ranch venison is fed a natural grasses diet for a rich, mild flavor.

This winter, Seasons 52 features a hearty new entrée showcasing two preparations of venison. An oak-grilled New Zealand venison chop is served atop a rich, comforting ragout of mushrooms and venison. The dish is complemented with broccolini, roasted red peppers, sweet potato mash and a drizzle of 15-year aged balsamic.

The signature venison dish is part of the restaurant’s winter menu. As with all dishes at Seasons 52, the seasonal menu features rustic cooking techniques like oak-fire grilling and brick-oven roasting to enhance flavor and create dishes that are naturally lighter.

Highlights of the winter menu include:
– Braised Short Rib & Aged Cheddar Flatbread with pickled beet, red onions, horseradish sour cream and micro cilantro
– Warm salad of California Golden Beets topped with toasted pistachios, Laura Chenel Sonoma Goat Cheese and micro basil
– Piedmontese Beef and Black Bean Chili with cilantro sour cream
– Roasted Parmesan Mushrooms filled with creamy spinach and served with a Parmesan tuile.

In addition, Seasons 52 has created two new cocktails inspired by fruits and herbs of the season:
– Cranberry & Sage: Prairie Organic Gin and white cranberry juice combine with fresh cranberries and sage for a warming winter cocktail bursting with seasonal flavor.
– Bourbon Berry Bramble: Maker’s Mark Bourbon, St. Germaine Elderflower liqueur, fresh raspberries and blackberries offer a fresh take on the classic bramble.
